Five summers ago we planted two rows of lavender behind the barn. This year, for the first time, there was enough for a batch of its own: light, perfumed honey that tastes faintly of the flowers. Drizzle it on yogurt, or bake it into shortbread.

Good to know

  • Raw and unheated.
  • A small batch: about 300 jars this year.
  • From the six hives by the lavender rows, July batches.
